Spicy Pork Rub.
This marinade or “rub” can be used on pork fillet, ribs or chops. Best is to make it the night before you want to cook the meat. It is more like a paste than a marinade.
Oven or BBQ or “braai” for those from South Africa.
Peel, deseed and grated cucumber, whole cummin seeds, chopped fresh mint leaves and natural yoghurt mixed together and seasoned to taste goes well this.
Spice Rub:
| 2 tsp | Turmeric |
| 2 tsp | Paprika |
| 2 tsp | Ground Ginger |
| 2 tsp | Ground Cummin |
| 2 tbsp | Olive Oil |
| 4 tbsp | Brown Sugar |
| 2 tbsp | Worcester Sauce |
| 2 tsp | Chilli Powder |
| 2 tsp | Tomato Puree |
| 2 tsp | Salt |
| 2 tsp | Pepper |
Method:
Mix all ingredients together and rub or massage the spice mixture into the meat and leave in fridge until needed. Cooked as prefered.
