All Purpose Cake.
I am sure that when it comes to baking a cake, a few people will rather run to the nearest shop or bakery and buy one. I am one who would rather watch frog eggs hatch then bake a cake. I find it is just too much fuss over nothing.
It is even worse when you have to live and work in high altitudes like I am at the moment. So here is a recipe that may help. I will give both versions. Cooking at home like normal or when you live in the Drakensberg or Cederberg or any place that nearly reaches the sky! I have baked the “high altitude” at home, which is at sea level and it works fine.
Cooking at Home*:
Ingredients:
| 170g | Soft Margarine |
| 170g | Caster Sugar |
| 170g | Self Raising Flour |
| 3 | Eggs |
| 1 tsp | Baking Powder |
| 1 tbsp | Hot Water (if needed) |
Cooking at Altitude:
Ingredients:
| 150ml | Natural Yoghurt |
| 150ml | Caster Sugar |
| 150ml | Sunflower or Vegetable Oil |
| 450ml | Self Raising Flour |
| 4 | Eggs |
| 1 tsp | Baking Powder |
Method:
Preheat oven to 180°C.
- Line cake tins with greaseproof paper and butter sides. You can use one or two tins of any shape. Loaf tins work just as good.
- Mix all ingredients in large bowl. (if *cooking at home, blend ingredients in food processor. Add a little hot water if mixture is too thick.)
- Put mixture in tins or divide evenly if using two.
- Bake in oven for 35 – 40 minutes at high altitude or 25 – 35 minutes at home.
- Remove from oven when cooked. Test with skewer to see if cooked.
- Allow to cool.
As mentioned I only bake the yoghurt one. What makes this cake so easy, is that there are many variations. (chocolate, orange, lemon, banana etc.). It is as limited as your imagination. Please feel free to come back with some feed back. Later post I will give some variations. I made a “train cake” one season for a little boy, so it shows what can be done with it.
